Spring Pizza With Pesto, Mozzarella & Mushrooms


1 pre-baked pizza crust, such as Boboli or
1 pre-made pizza dough, cooked per directions
1/3 cup pesto
8-10 oz. fresh mozzarella in water, 1/4 “ slices
1 ½ cup mushrooms, sliced
½ cup green olives, sliced in half
1 small jalapeno, thinly sliced
¼ cup grated parmesan reggiano cheese
1 cup arugula

Cooking Instructions:

Cook the pizza crust as directed, or lightly warm the pre-baked crust in a 350 degree oven.

Turn oven heat up to 400 degrees.

Brush the warm crust with the pesto sauce, making sure to get as close to the edges as possible.

Evenly scatter the mozzarella cheese, mushrooms, green olives and jalapeno over the top of the crust.

Sprinkle the Parmesan on top of the pizza and place in the preheated oven. Cook for 8-10 minutes or until the cheeses are melting.

Remove from oven and top with the arugula. Cut into slices and serve!

Recipe Notes

Options: Top with a drizzle of olive oil or a soft cooked egg.
