Cajun Crab Queso

  • 1 (8 oz.) can evaporated milk
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded white cheddar cheese
  • 1 (10 oz.) can diced tomatoes and green chilies, drained
  • 1 (8 oz.) can lump crab meat, drained
  • 2 tsp. Cajun seasoning
  • 1 small red bell pepper, seeded and finely chopped
  • 2 green onions, thinly sliced
  • Tortilla chips, for serving

Ready in: 17 minutes

Serves: 8

  • In a medium saucepan, over medium-high heat, bring milk to a simmer, about 5 minutes. Whisk in Monterey Jack and cheddar cheeses until smooth, about 1-2 minutes. Stir in tomatoes and green chilies, 1 3/4 cups crab and Cajun seasoning until combined.
  • Top with remaining crab, bell peppers and green onions. Serve immediately with tortilla chips, or transfer to a small slow cooker or fondue pot to keep warm.
