Loaded Sweet Potato Fries

Ingredients:

  • 2 lb sweet potatoes, cut into 1/2-inch thick wedges
  • 1/4 cup maple syrup, divided
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 tbsp Dijon mustard
  • 1/2 cup finely crumbled feta cheese
  • 2 tbsp finely sliced green onion

 

Cooking Instructions:

  • Preheat oven to 425˚F. Toss together sweet potatoes, 2 tbsp maple syrup, olive oil and salt. Arrange in single layer on parchment paper-lined baking sheet.
  • Bake for 25 to 30 minutes or until golden brown and tender.
  • Stir together remaining maple syrup and mustard until blended; set aside.
  • Arrange baked sweet potato wedges on serving platter. Sprinkle with feta and green onion. Drizzle with maple mustard sauce.

Serve these yummy baked sweet potatoes as a holiday side dish or appetizer.

If desired, scatter 4 slices cooked and crumbled bacon or 1 cooked and crumbled chorizo sausage over sweet potato fries.
