bacon grease, as needed (can substitute with Canola oil)
1 tsp. black pepper, coarsely cracked
Preheat grill to high heat.
Combine butter, cheese, garlic and thyme in a bowl and season with salt and pepper, to taste. Cover the bowl and refrigerate for 20-30 minutes.
Brush steaks with a light coating of bacon grease, then season with salt and cracked pepper. Grill meat until it chars on both sides and is cooked to medium-rare doneness; or to you preferred liking. Transfer steaks to a plate, top with butter, sprinkle with a bit more fresh thyme and freshly cracked black pepper. Let rest for 5 minutes prior to serving.
