Grilled Filet with Thyme & Blue Cheese Butter

Ingredients

  • 1/4 c. crumbled blue cheese
  • 2 tsp. fresh thyme, finely chopped
  • 1 clove garlic, finely chopped
  • Salt and freshly cracked black pepper
  • 4 filet mignons (1 1/2- inch thick)
  • bacon grease, as needed (can substitute with Canola oil)
  • 1 tsp. black pepper, coarsely cracked

Cook Time: 10 minutes
Inactive: 30 minutes
Total Time: 50 minutes
Serves: 4

  • Preheat grill to high heat.
  • Combine butter, cheese, garlic and thyme in a bowl and season with salt and pepper, to taste. Cover the bowl and refrigerate for 20-30 minutes.
  • Brush steaks with a light coating of bacon grease, then season with salt and cracked pepper. Grill meat until it chars on both sides and is cooked to medium-rare doneness; or to you preferred liking.   Transfer steaks to a plate, top with butter, sprinkle with a bit more fresh thyme and freshly cracked black pepper. Let rest for 5 minutes prior to serving.
