Vegan Mushroom Fajitas

Ingredients

● 1 lime, juiced, plus lime wedges, for serving
● 1 T. olive oil
● 1 tsp. garlic powder
● 1 tsp. onion powder
● 1 tsp. kosher salt
● 1 tsp. chili powder
● 1 lb. mixed wild mushrooms, or portabella mushrooms, sliced
● 1 ea. green, red and yellow bell pepper, sliced
● 1 large red onion, sliced
● 12 (6 inch) corn tortillas, grilled
● Chopped fresh cilantro, for garnish
● Vegan sour cream, for serving
● Guacamole, Homemade or store bought, for serving

Cooking Instructions

1. Preheat oven to 450°F and line a rimmed baking sheet with parchment paper or aluminum foil. In a large bowl, combine lime juice, olive oil, garlic powder, onion powder, salt and chili powder. Add mushrooms, bell peppers and red onion and toss to coat.

2. Transfer to prepared baking sheet. Bake, flipping vegetables halfway through until light golden brown and tender, about 15-20 minutes.

3. Top each tortilla with vegetable mixture, cilantro, sour cream and guacamole. Serve with lime wedges and enjoy!
