Ingredients
● 4-5 ears of corn, cooked on the grill or boiled
● 1 pt strawberries, stemmed and halved
● 2 ripe avocados, cut into cubes
● 2 cups cherry tomatoes, halved, or 2 large heirloom tomatoes, cubed
● 1/2 red onion, diced
● 1 garlic clove, minced
● 1 cup crumbed feta cheese
● 1 handful chopped fresh herbs (cilantro, parsley, or basil, your choice)
● 2 T. red wine vinegar
● Juice of one lime
● 3 T. olive oil
● Salt & pepper, to taste
