Early Summer Salad with Crunchy Corn, Nectarines and Feta
Ingredients:
4 cups red leaf lettuce, chopped
4 cups green leaf lettuce, chopped
2 nectarines, sliced
1 cup toasted corn snacks
1 cup feta cheese, crumbled
½ small red onion, slivered (optional)
Dressing
2 T. red wine vinegar
2 tsp. honey
1/2 cup lemon-infused olive oil
Salt & pepper
Cooking Instructions:
In a small bowl, mix the vinegar and honey. While whisking, drizzle in the olive oil to combine. Season with salt and pepper to taste. Set aside.
Combine the lettuces in a large bowl. Top with the nectarines, corn, feta and onion.
Pour dressing onto the salad in small increments, tossing as you go. Continue until the salad is dressed to your liking.
Serve with a crusty piece of French bread or as a side to your favorite grilled meat.
