Early Summer Salad with Crunchy Corn, Nectarines and Feta


  • 4 cups red leaf lettuce, chopped
  • 4 cups green leaf lettuce, chopped
  • 2 nectarines, sliced
  • 1 cup toasted corn snacks
  • 1 cup feta cheese, crumbled
  • ½ small red onion, slivered (optional)


  • 2 T. red wine vinegar
  • 2 tsp. honey
  • 1/2 cup lemon-infused olive oil
  • Salt & pepper

Cooking Instructions:

  • In a small bowl, mix the vinegar and honey. While whisking, drizzle in the olive oil to combine. Season with salt and pepper to taste. Set aside.
  • Combine the lettuces in a large bowl. Top with the nectarines, corn, feta and onion.
  • Pour dressing onto the salad in small increments, tossing as you go. Continue until the salad is dressed to your liking.
  • Serve with a crusty piece of French bread or as a side to your favorite grilled meat.
