Feta, Watermelon & Edamame Salad

● 2 cups diced seedless watermelon
● 1 cup cooked edamame
● 1/2 cup crumbled feta cheese
● 1 T. chopped fresh mint
● 1 T. balsamic vinegar
● 2 tsp. olive oil
● Kosher salt and freshly ground black pepper, to taste

Cooking Instructions

In a large serving bowl, toss watermelon, edamame, feta, mint, vinegar and olive oil together until coated. Season with salt and pepper. Cover with plastic wrap and refrigerate for at least 1 hour before serving.
